Sneaky Honey Wheat Muffins

Still going on the whole food diet.  Sunday is usually my day to make a big breakfast and I was craving muffins.  After a quick internet search I found a Pumpkin Wheat Honey Muffin recipe at allrecipes.com.

I liked the recipe but made a few modifications.  

I know the kids would have preferred chocolate chips in them.  
They seem to want them in whatever I can put them in.  
Waffles, pancakes, muffins.  
Whatever.  
Those little nuggets of chocolate heaven make anything taste better.  

But since we are trying to be good this week, I left them out.  
I also have a boy who doesn't like raisins in stuff, so I left those out too.  
I think they would totally work for these muffins, craisins too.  
Again, this time I left them out.  

The muffins are still good all by themselves and have a powerful ingredient list.  
I hope you like them too.

Sneaky Honey Wheat Muffins

Since I'm feeding 7, I doubled the original recipe.  
I'll give you my version.  
It made 18 regular muffins, and 16 mini muffins.


Soak 3/4 cups pitted dates in water for about 20 minutes.

Preheat oven to 350 degrees

Grind 2 cups white wheat and 1 cup buckwheat

Drain most of the water off the dates and puree with the following:
1/4 cup molasses
1 1/2 cup canned pumpkin puree
1 cup applesauce
1 cup honey

In mixing bowl mix:
3 cups whole wheat flour
2 tsp pumpkin pie spice
1 1/2 tsp baking powder
1 tsp baking soda
1 tsp salt

Mix together then add:
2 eggs
and rest of liquid puree.
Mix until dry ingredients are absorbed

Add:
1 cup chopped walnuts
1 cup raisins (optional)
1 cup chocolate chips (optional)

Prepare muffin tins with paper liners or spray with cooking spray.
Spoon batter into muffin tins filling 2/3 full.

Bake for 18 minutes.

Let cool slightly and enjoy!


Pumpkin, Dates, Applesauce, Whole Grains, and Honey.  
Super yummy. 
Super healthy!
